Alvear Montilla Fino is a distinguished wine produced by Bodegas Alvear, located in Montilla, Spain, a region famed for its fine fortified wines. Made exclusively from the Pedro Ximénez grape, this dry fino wine is crafted using the solera system, a traditional method similar to that used in Jerez for sherry, but bearing the distinct influence of Montilla’s unique climate and soil. The aging process occurs in American oak casks under a thin layer of yeast called ‘flor’, which protects the wine from oxidation and imparts delicate aromas and flavors.
