Papagiannakos Savatiano Old Vines is a remarkable wine hailing from Greece’s Attica region, crafted by Papagiannakos Winery, a pioneer in resurrecting and promoting indigenous Greek varietals. This wine is made entirely from Savatiano, an ancient Greek grape variety traditionally used in Retsina production. Papagiannakos Winery, however, elevates Savatiano by sourcing grapes from old vines, which add depth and intensity to the wine. Harvesting is done by hand to ensure the best quality selection. Fermentation is induced with natural yeasts and takes place in stainless steel tanks, preserving the grape’s natural fruitiness and acidity. The winery uses minimal intervention to allow the true nature of the Savatiano grape and the unique characteristics of the local terroir to shine.
